Baked Mushroom Chicken Recipe

The Food Fight results are being posted today and I haven’t even posted my entry. The theme of the event is ‘Mother’s Favorite Dish’ in anticipation of Mother’s Day next weekend. When I contacted my mom, she confirmed what I expected … she has so many favorites that it was hard to pick just one.

She provided several different choices. I went with the one that I liked the most.

Mushroom Chicken

6 chicken breasts
8 oz. mozzarella cheese
8 oz. sliced mushrooms
2 cups italian breadcrumbs
2 tablespoons olive oil
salt and pepper to taste

Heat a skillet and add the 2 tablespoons of olive oil. Dredge chicken breasts in breadcrumbs and brown on both sides. Place breasts into a baking dish and bake at 350 for 45 minutes. Remove from oven and sprinkle with mushrooms and mozzarella cheese, bake an additional 15 minutes.
