
I have many fond memories of my mother’s banana bread. I’ve looked at other recipes and there isn’t anything in particular that make this recipe unique, aside from the love and care that went into its baking.
Banana Bread
2 1/2 c. flour
3 teaspoons baking powder
1/2 teaspoon salt
1 c. sugar
1/4 c. butter
1 egg
1 c. mashed ripe bananas (about 3)
1 tablespoon grated lemon peel
1/2 c. milk
1 c. chopped walnuts
Mix dry ingredients in large bowl then add butter, followed by all remaining ingredients. Mix just until the ingredients are combined, do not over mix.
Coat a bread pan with butter or nonstick spray, spoon in the batter. Bake at 350 for about 1 hour or until a toothpick inserted into the center comes out clean.
Although good on its own, thick slices make for wonderful french toast as well.
