Baked Mushroom Chicken Recipe

The Food Fight results are being posted today and I haven’t even posted my entry. The theme of the event is ‘Mother’s Favorite Dish’ in anticipation of Mother’s Day next weekend. When I contacted my mom, she confirmed what I expected … she has so many favorites that it was hard to pick just one.

She provided several different choices. I went with the one that I liked the most.

Mushroom Chicken

6 chicken breasts
8 oz. mozzarella cheese
8 oz. sliced mushrooms
2 cups italian breadcrumbs
2 tablespoons olive oil
salt and pepper to taste

Heat a skillet and add the 2 tablespoons of olive oil. Dredge chicken breasts in breadcrumbs and brown on both sides. Place breasts into a baking dish and bake at 350 for 45 minutes. Remove from oven and sprinkle with mushrooms and mozzarella cheese, bake an additional 15 minutes.

Hey Paula!

I’ve been overwhelmed with my ‘non-food’ life :-) I apologize for being absent for so long.

I’m hoping to post something soon … am heading out tonight for a long weekend in Seattle. I’ve never been to Seattle and I’m looking forward to the trip. I’ve heard of a yummy bakery there called Pieroshky, Pieroshyky that I’m hoping to visit for a nice heavy Russian pastry or two.

I’m probably too late, but if you can, get to Salumi http://www.salumicuredmeats.com/. Incredible sausage! Have a wonderful, safe trip – there are SO many yummy places there – I had some of the best dolmas ever in a storefront very near the Public Market. I WANNA GO!
