One book Ive always wanted to have but is mad expensive is Japanese Cooking: A Simple Art. They have excellent diagrams of filleting different kinds of fish in there.&lt;br/&gt;&lt;br/&gt;(You were contacted to try fish? Holy cannoli, how do I sign up? :)</description>
