Mayonnaise Cake Recipe

A rather bland piece of paper carries an intriguing cake recipe featuring mayonnaise. At first, I wrinkled my nose. But once I thought it over, it does make sense. Mayonnaise is essentially eggs and oil.

I found a few other brave souls who had made this recipe. From their online reviews, it’s moist, dense, and without any mayonnaise flavor. It can also be made using Miracle Whip salad dressing.

Try swapping out the cocoa powder with a teaspoon or two of a spice blend (cinnamon, nutmeg, cloves). Or, throw in some toasted nuts or raisins.

Mayonnaise Cake Recipe
2 cups flour
1 cup sugar
4 Tablespoons cocoa
1 1/2 teaspoons baking powder
1 pinch salt
3/4 cup mayonnaise (or Miracle Whip)
1 cup cold water
1 teaspoon vanilla

In a large mixing bowl, sift together the flour, sugar, cocoa, baking powder and salt.

Add the mayonnaise, water, and vanilla. Mix well.

Pour into a greased 13 x 9-inch pan and bake at 350F for about 30 minutes, or until it tests done.
