
It seems like forever since I put on a Food Fight … actually, it’s been 1 year since I started the food event. I held it for 2 months then took off the summer from food blogging due to work.
So, now that I’m back in the saddle, I decided to revitalize the Food Fight and found a few willing souls to expose their pantries and recipes. There may only have been a few of us, but it’s the quality not the quantity that matters, right? This round-up includes great dishes but also a glimpse into the pantries behind them.

UPDATE: I just found a hand full of submissions in my email spam folder (typical Monday). I’ve updated the post to include those I found — if you submitted a post and don’t see it, please let me know. So sorry for the issue — I found lots of other ‘good’ emails hiding in there too. Ugh!

Ani responded quickly to the Food Fight and she made her take on a Giada recipe. I think Giada would be proud of what you whipped up from your pantry!
2. Lentil Soup

Steph is a former Food Fighter and she created this wonderful lentil soup from what she had on hand. And although she thinks her pantry is messy, I don’t think so at all! I am curious what’s in the tub on the middle shelf on the back right side :-)
3. Mattar Tofu with Chana Masala Chutney

Laura made this amazing tofu dish based on her favorite Aloo Mattar. The tofu glazed in tamarind chutney creates a flavorful dish with alot less starch than the original. And, from the looks Laura’s pantry, she could make alot of great dishes without having to run to the store!

5. Baked White Beans with Tuna and Sage

The phenomenal Holly of PheMOMenon created a savory bean and tuna dish featuring my favorite herb sage. Like any wonderful mom, her pantry is stocked and ready for any situation!
6. Tomato Herb Polenta & Poached Egg

Kelly also considered making a bean and tuna dish similar to Holly’s, but opted to go in a different direction. I love her use of polenta and find it a frequent ‘go-to’ ingredient in my house too.
7. Lentil and Walnut Pate

Johanna made a great looking pate, along with some tasty looking chickpea muffins. Her pantry is loaded up with all sorts of gluten free goodies!

In looking through KC’s pantry pics, you’ll see lots of good items … and also the moldy duck :-) I’m so glad you didn’t decide to use it!
9. Matcha Wasabi Mashed Broccoflower
